Stir fry marinade.

This is a basic stiry fry marinade for any meat. This is sourced from Kenji’s book The wok.

Ingredients

For every pound of meat:

  • 1/2 teaspoon (1.5g) kosher salt
  • 1 teaspoon (5 ml) light soy sauce or shoyu
  • 1 teaspoon (5 ml) shaoxing wine or dry sherry
  • 1/2 teaspoon (2 g) sugar
  • 1/2 teaspoon (1.5g) cornstarch
  • small pinch of freshly ground white pepper
  • small pinch of MSG
  • 1/2 teaspoon (2g) baking soda
  • 1 teaspoon (5 ml) peanut, or other neutral oil

Steps

  1. Before marinating the meat using the ingredients wash the meat with cold water to tenderize the meat.
  2. Marinate the meat.
