New Delhi Chicken Curry
Ingredients:
- 2 Rode uien
- 2 Tomaten
- 4 Kippen dijen (Maakt niet uit of het in stukjes is of niet zolang de pan niet overvol raakt)
- Gember en knoflook paste
- Tomaten puree
Spices:
- Ground Turmeric
- Dried fenugreek leaves
- Garam masala
- Ground coriander
- Red chile powder
- Kashmiri chile powder
Whole Spices:
- 1x Cinnamon stick
- 1x bay leaf
- 2x Black Cardamom pods
- 2x Green Cardamom pods
- 4x Black peppercorns
- 3x whole cloves (Kruidnagel)
Steps:
- Marinate the chicken with turmeric.
- Fry off the chicken in a neutral oil. (Canola etc)
- Remove the chicken pieces from the pan.
- Place in the whole spices in the leftover oil.
- Add red onions with a pinch of salt.
- Add ginger and garlic paste.
- Wait until the oil leaves the onions.
- Add Ground coriander, red chile powder, kashmiri chile powder.
- Saute for a couple of minutes.
- Add tomato paste and tomatoes.
- Add water to deglaze since it can cook off.
- Add yoghurt.
- Add chicken back in and add some water.
- Simmer for a couple of minutes.
- Finish off with dried fenugreek leaves, garam masala and finish with parsley.
